Trip to Copper Fox Distillery
On Monday July 13th we made a trip to Copper Fox Distillery in Sperryville, VA. Copper Fox creates some very tasty single malt whisky and bourbon. In addition, they also malt all of their own grain. That was actually the whole reason we made the trip up there, the whisky was just a nice side benefit.
When we arrived they showed us around the distillery. They floor malt all of their grain by hand using tradtional methods:
Unfortunately, I didn't take a picture of their kiln. But they use a wood fired stove to dry the malt.
Their barrel room is also a thing of beauty:
They have a unique, very secretive method that they use during their barrel aging. The result is a well rounded whisky that is aged quicker than most distilleries. While we were there I purchased a bottle of their single malt whisky that had undergone there regular aging process and then was finished in a port wine barrel for an additional year.
Their bottles are all filled, labeled, waxed and packaged by hand. Copper Fox does not seem to cut corners with their spirits.
